Easy Crockpot White Chicken Chili

As soon as the cooler weather starts to move in; I pull out all of my favorite soup and stew recipes. One of the recipes that is always at the top of that list is my white chicken chili recipe.

Now, I know what you are thinking…chili isn’t soup. And you are right. Chili isn’t soup or stew but this white chicken chili is the perfect cool weather recipe. It is creamy, flavorful, easy and can be cooked in the slow cooker.

I love recipes that bring a ton of flavor but also are adaptable to crock pot use (check out my favorite crockpot here). This recipe is so easy to throw into the crockpot, forget about it until supper and then enjoy it!

This is a recipe that I got from my mom and have tweaked over the years to make it even more delicious. I love sitting down at the table with some delicious white chicken chili and a piece of cornbread. It just brings about sweet memories.

I would highly recommend cooking some cornbread with this. You can make it from scratch or you can go buy a pre-packaged mix. We really love the Krusteaz cornbread mix and preparing it in the skillet (my favorite skillet).

This recipe is kid-friendly and is sure to bring a smile to everyone’s face!

White Chicken Chili

This delicious white chicken chili is a modern take on an old classic. It is full of rich, creamy flavor with a chili spice to it. This recipe is perfect for those cool months when all you want to do is curl up and get cozy. This pairs well with some old fashioned skillet cornbread.

Equipment

  • Crock Pot

Ingredients
  

  • 1 TBSP olive oil
  • 1 lb chicken cut into small pieces
  • 1 onion chopped
  • 1 clove of garlic pressed
  • 2 cans chili beans/ kidney beans
  • 2 cups chicken broth
  • 1 tsp season salt
  • 1 tsp cumin
  • ½ tsp pepper
  • 1 cup sour cream
  • ½ cup heavy whipping cream
  • shredded cheese Optional

Instructions
 

  • In a pan saute onions, chicken and garlic until chicken is seared.
  • Place chicken, garlic, onion, beans, broth and seasonings into the Crock Pot
  • Cook on HIGH for 4-6 hours. 4 is plenty but you can go to 6 for more flavor and tenderness of meat.
  • Turn off Crock Pot and add sour cream and heavy cream.
  • Stir and serve. Garnish with cheese for extra flavor

Notes

This recipe can be cooked on the stove top as well. Simply follow all steps (excluding step 3) and cook in pot for 30 minutes to 1 hr. then turn off heat and add sour cream and heavy cream.

This chili pairs well with some tortilla chips or skillet cornbread. My husband loves eating every meal with rice so we often make a side of rice and pour the chili over it.

I hope your family enjoys this delicious white chicken chili as much as we do. If you prefer some heat to your chili then add a little hot sauce or cayenne pepper. Otherwise this is a relatively mild chili which makes it a kid friendly recipe.
